Coffee Rubbed Salmon

Not only is salmon delicious and easy to cook, it’s also one of the smartest protein choices you can make. Why? Omega-3s! These fatty-acids have numerous health benefits. First of all, they are vital to brain function and eye health by promoting healthy cell membranes. Recent studies indicate that they may also reduce the risk of heart disease and cancer. Their anti-inflammatory properties can help alleviate the symptoms of other chronic diseases as well, such as arthritis. And if you aren’t won over yet,  Omega-3s are natural mood boosters!


  • Kosher salt
  • Extra virgin olive oil
  • Fire & Flavor coffee rub (available at Whole Foods)
  • Fillet of salmon (0.35-0.40 lb)


  • Oven-safe skillet


  1. Pre-heat oven to 350 degrees.
  2. Rinse fish with cold water and pat dry with a paper towel.  Drizzle evoo over each side of the fillet, then finish it off with a sprinkle with kosher salt and a generous coating of coffee rub.
  3. Heat 2 tbs oil in skillet on med-high heat.  When oil is hot, add fillets to skillet, skin side down and allow to cook for about 1-2 minutes.  Flip and cook the other side for the same amount of time.
  4. Transfer the skillet from stove top to the oven and allow fish to bake for 7-8 minutes (until flesh looks opaque).
