Sweet & Spicy Baked Yam Fries

What’s for dinner? Sometimes choosing the main dish is easier than choosing what to have on the side. And if you’re like me, roasted asparagus gets old real fast.

I recently made these tasty fries and they hit the spot!  Next time you’re scanning the recipe index in your brain while rushing through the aisles of the grocery store, remember this quick and easy fix!

Ingredients:

  • 2 yams or sweet potatoes
  • Juice of one orange
  • 1/4 tsp cayenne pepper
  • 1/4 tsp groud ginger
  • 1/4 tsp paprika
  • Salt and pepper to taste

Preparation:

  1. Preheat the oven to 450 degrees.
  2. Peel and cut potatoes into long, slender strips.
  3. Mix orange juice, cayenne, ginger, and paprika together in a small sauce pan.  Heat on stove for about 5 minutes.
  4. Transfer the potatoes into a large mixing bowl and pour the orange juice and spice mixture over them.  Toss to coat.
  5. Distribute the fries evenly on a baking sheet, sprinkle with salt and pepper, and bake for 25-30 minutes.

    Did Laura know you were making this? She literally made the same thing yesterday, although I’m not sure if the spices were the same (and they were a big hit)!

      yes I did…although I used paprika, nutmeg and salt and pepper!

    I too made sweet potato fries the day before reading this. Wish I had seen this earlier, as it sounds like some amazing flavor combinations. I will take note for the future.

    This was a Lil’ hot and spicy but still was very good.
