Roasted Potatoes with Smoked Sea Salt and Thyme

This is a simple side dish that pairs well with any entrée. Potatoes are great roasted with olive oil and salt & pepper, but if you have fresh herbs or other tasty seasonings, it’s very easy to kick them up a notch!

  • Small red potatoes (any kind of potato, really)
  • Extra Virgin Olive Oil
  • Salt (I used Central Market’s smoked serrano sea salt)
  • Freshly cracked pepper
  • A few pinches of fresh thyme leaves
Roasting Instructions:
  1. Preheat oven to 425.
  2. Smoked salt is found in the bulk foods section at Central Market and Whole Foods.

    Chop the potatoes into 1 inch pieces.

  3. In a large bowl drizzle EVOO over potatoes, season with salt and pepper, and sprinkle with fresh (or dried) thyme (or oregano, rosemary, etc). Toss a couple of times to ensure the potatoes are well coated. Transfer to a baking sheet.
  4. Roast for about 25 minutes or until golden brown with crispy edges.
