The Farmhouse Veggie Burger

Of the 260 channels I pay for, I watch 4 of them: The Food Network, The Cooking Channel, Bravo (Top Chef!), and HGTV.  A while back, I was flipping through the channels and caught The Best Thing I Ever Ate on The Food Network.  This particular episode featured burgers. Not being much of a burger gal, I was getting ready to change the channel when Duff Goldman started going on and on about a veggie burger.  A veggie burger. Now I’m not one to judge a book by its cover, but Duff doesn’t look like the kind of guy who eats veggie burgers.  On the contrary, he’s a pretty hefty guy who looks like he likes his meat. I’m just sayin’. So when he began describing this mouth watering “burger” from Portland, Oregon, I knew it must be legit. And off to the grocery store I went.

The Farm Cafe was nice enough to share their special recipe with the public after the show aired. I followed it without any modifications and it turned out great!  (Tip: locally baked buns and caramelized onions really make a difference!)

Farmhouse Veggie Burger

Serves 4

Ingredients

  • 2 whole eggplant, peeled and 1 inch diced
  • 2 scallions chopped
  • 1 Tbs minced parsley
  • 1 cup shredded medium cheddar
  • 1 cup bread crumbs
  • ¾ tsp black pepper
  • 1 tsp minced garlic
  • ¼ tsp salt
  • 3 Tbs olive oil
Preparation
  1. Sauté eggplant on low heat till grey and very soft.
  2. Mix together eggplant and all the rest of the ingredients, except oil, let rest for ½ hour in refrigerator.
  3. Form into 4 equal patties about an inch thick.
  4. In a sauté pan, heat olive oil until shimmering hot, fry each side of patty till dark brown, about 5 minutes each side.
  5. Serve on locally made sandwich bun with caramelized onions, spicy brown mustard, roasted red peppers and salad mix.
